Vacuum sealing does two separate things, and the one that matters at home is the second. It slows oxidation, which is why a sealed steak keeps its colour; but more usefully it removes the air that carries ice crystals, so frozen food comes out of a sealed bag without freezer burn and without the grey edge that a zip bag gives it after a month.
The bags are textured on one face rather than smooth. That texture is what lets the machine pull air out of a bag it has already gripped at the mouth — a smooth bag seals flat against itself and traps air in the middle, which is the usual reason a sealer appears not to work.
