Silicone Baking Mat, 30 x 40 cm
It replaces baking parchment, and it keeps replacing it — which is the whole economic case. A roll of parchment is used once; this is washed and used again for years.
The raised edge is the feature that separates a good mat from a flat sheet of silicone. Butter, syrup and rendered fat run to the edge of a tray and over it; a lip contains them, so the oven floor stays clean and a tray of cookies does not weld itself to the baking sheet underneath. Heat resistance runs to 230°C / 446°F, above any domestic baking temperature.
At 30 x 40 cm it fits a standard baking tray. Nothing sticks to silicone, so a batch of meringues or caramel lifts away without a knife.
