Rattan Bread Proofing Basket
A proving basket does one thing a bowl cannot: it draws moisture out of the dough's surface while it rises, which is what produces a crust that crackles rather than one that softens.
Rattan is the traditional material for exactly that reason — the open weave lets air reach the skin of the dough from every direction, and the cane absorbs what it pulls out. It also leaves the spiral pattern on the loaf that makes a home-baked boule look like one.
Four round sizes, 18 to 25 cm. Match the basket to the dough weight rather than to the oven: an under-filled banneton gives a loaf that spreads, and an over-filled one rises over the rim and sticks.
