Japanese Porcelain Sushi Plate, Peacock Green
The outline is deliberately irregular. In the Japanese tradition a serving plate is not expected to be symmetrical, because an off-round edge gives the food a more interesting space to sit in than a circle does.
Peacock green is a difficult colour to get right on porcelain and it is the reason to choose this one: deep enough to set off pale fish and rice, with the glaze pooling slightly darker where the surface dips. Against sushi, sashimi or anything white, the contrast does the plating for you.
It is porcelain rather than stoneware, so it is thinner at the edge and harder in the body. Use it for sushi, for a single dessert, for cheese, or as the plate that holds one good thing rather than a meal.
- Irregular outline: off-round by design, in the Japanese manner
- Peacock green: deep enough to set off pale food
- Glaze pools darker: where the surface dips
- Porcelain: thin at the edge, hard in the body
- One good thing: a plate for a dish, not a meal
- Sushi to cheese: works beyond what it was made for
