Dual Grit Diamond Knife Sharpener
Two grits, used in order. The 400 cuts a new edge onto a blunt blade; the 1000 polishes that edge so it slices rather than tears. Using only one of them is why most home sharpening produces a knife that is sharp for a week.
The abrasive is diamond, which is harder than any kitchen steel and therefore does not wear smooth the way a ceramic rod does after a year. It also works on harder modern blades that a traditional whetstone struggles with.
The frame is aluminium alloy, light to handle but rigid enough not to flex under pressure — flex is what causes an uneven edge. The base is non-slip, so the sharpener stays put on a worktop and both hands stay on the knife where they belong.
- Two grits: 400 to restore, 1000 to polish
- Diamond abrasive: harder than kitchen steel, does not wear smooth
- Works on hard blades: where a whetstone struggles
- Rigid aluminium frame: no flex, so the edge stays even
- Non-slip base: stays put, both hands on the knife
- Two finishes: wood-effect or black
